Due to the very nature of exchange rates and how often they can change, when an order is completed, the plugin will save the currency of the order and the current prices and order totals of the order so when prices do change due to the fluctuating exchange rate, the order will maintain the actual prices and the totals that were paid at the time of purchase.
Because the plugin will modify the order and hand control back to Woocommerce, which will save the order with the new details as normal, if you were to deactivate the plugin, the orders details would still be maintained and the orders prices and currency would not revert back to your store base currency. So whether the plugin is active or not, your orders will always be accurate.
